Food Demonstration with Mitsutoshi Sekita

Mitsutoshi Sekita, sushi chef and former Cultural & Educational Affairs Coordinator with the Consulate General of Japan in Miami, paired up with the Culture Department for the consulate to do a public demonstration on Japanese cuisine. |
The first part of the demonstration featured squid that was caught, packaged, and shipped from the Tohoku (northeastern) part of Japan. Although the fisheries in the area were affected by the March 11 earthquake, tsunami, and the ensuing nuclear situation, most of the seafood from this area is safe to eat. |
Mr. Sekita demonstrated two ways of preparing squid: grilled and fried in tempura batter. |
The second portion of the demonstration taught the students how to properly prepare rolled sushi. Here, he shows the traditional bamboo mat used for created rolled sushi. |
At the end, Mr. Sekita unveiled three sushi boats full of California rolls and Rainbow rolls for the attendees. |
